National Blueberry Pancake Day
Happy National Blueberry Pancake Day! I really think people just make some of these days up just for the sake of it, but this was too delicious sounding to pass up. Below is a super easy recipe to follow and help you celebrate!

Ingredients:
- Flour – 1 1/4 cup gluten-free
- Baking Powder – 1 tbsp.
- Egg – 1
- Milk – 1 cup
- Sugar – 1 1/4 tsp.
- Butter – 1/2 tsp. melted
- 1/2 cup fresh blueberries
Mix flour, baking powder, salt and sugar in a large bowl. In a smaller bowl, mix together the egg and the milk. Slowly add the egg and milk mixture into the large bowl. Add the butter and blueberries and let it sit for about an hour or so.
Once the hour is up, pour the mixture into a hot griddle – mixture amount depending on how big or little you’d like your pancakes. I actually use a melon baller to make silver dollar pancakes.

I love blueberry pancakes and so do my kiddos. I’ve never tried making them gluten-free but I do have some King Arthur gluten-free flour on hand. And some blueberries. I think I know what’s for breakfast tomorrow!
