How I started making healthy choices

I am the first one to admit that I don’t eat enough fruits and vegetables.  I have good intentions when it comes to making healthy choices when it comes to food.  I go to the supermarket and purchase apples, grapes, strawberries, string beans, broccoli, etc. but by the time I remember that I have them in the fridge, they have already gone bad.

I have since decided that I am going to be much more mindful insomuch as the quantity (and quality) of fruits and vegetables that I and my family ingest.  Stefani from Endlessly Organic contacted me, asking if I would be interested in receiving a complimentary delivery of their fruits and veggies medium box – the timing couldn’t have been any better!

The box of goodies was delivered to my doorstep and I have to admit that I was a bit more excited for this box of 100% USDA organic yumminess than my clothing subscription boxes that usually adorn my front door.  I was ready to make a healthy change and here was the first step!  I lovingly opened the box (seriously I did…ask my husband because he got a kick out of it), super excited to see what was inside (each delivery may be different depending on what’s in season as well as availability).

Here was my haul!

  • Kale
  • 2 yellow onions
  • Romaine lettuce
  • Broccoli
  • Spring mix
  • 2 zucchinis
  • 1 cucumber
  • 2 tomatoes
  • 2 gala apples
  • mushrooms
  • 2 pears
  • carrots
  • red potatoes
  • grapefruit

As I scanned over everything, different recipes came to mind.  First was kale chips!  I have been wanting to make kale chips for ages, and have even bought bunches of kale in the past but they too withered.  Not this time – I was going to take full advantage of this beautiful bunch of organic kale.

Recipe: Kale Chips

You will need:

  • Bunch of kale
  • Olive oil
  • Sea salt
  • Parchment paper

Directions:

  • Preheat the oven to 350 degrees.
  • Remove the stems from the kale and break the leaves into bite-sized pieces.  (My little man helped me with this step) Making Healthy Choices Kale

  • Place the kale in one layer on a baking tray lined with parchment paper.
  • Sprinkle the sea salt and olive oil over the top
  • Bake for 10 – 12 minutes or until the ends get to be a crispy brown. Making Healthy Choices Kale 4

SO GOOD. My kids even liked my kale chips, which will now become a great after school snack.

Instead of grabbing for a handful of chips, that afternoon I chose a gala apple from my recent bounty. YUM!

With the rest of the goodies, we made a lot of great side dishes such as red mashed potatoes, glazed carrots and roasted broccoli.  The yellow onions were welcome additions to some great recipes, as was the tomatoes, romaine, cucumber, and spring mix in my lunchtime salads.

  1. This post came at a perfect time! I’m almost 4 months postpartum and am getting ready to start my workouts and healthy eating again. I’ve slacked a bit the past few weeks, but love this post for the motivation. I’ve always wanted to make kale chips too so gonna have to make this next week.

  4. This looks fantastic – can you believe I’ve still never had kale chips?? I’m trying to be healthier and have traded my usual lunch cookie or brownie for a smoothie. That’s a start, right?!

  8. I always bring at least 2 apples to work each day and I made it a habit to eat them. I also bring a tupperware filled with fresh veggies like cucumber sticks, carrot sticks, bell pepper etc. which I have with my sandwich. Healthy eating habits are so easy to implement into your diet and it makes you feel so much better! I have yet to make kale chips – I think you might have convinced me to give it a try!

    I haven’t tried a lot of Kale, but I’ve been trying to implement Apples and almonds as my go to snack. They seem to work well and do a good job of filling my craving and keeping me full.

  12. I find that if I pack extra cut up veggies or fruit in my lunch, I will end up using them as a healthy snack. I’m now in the habit of eating an apple every day mid-morning. Yesterday, I forgot to pack one and was actually a little sad about it!
