I knew Memorial Day was coming up, but it just hit me that it is THIS weekend.  Well, there goes the in-depth meal planning I was going to do.

We are planning to have a few families over on Sunday and I’ve decided to make my favorite fruit salad!  It is super easy to make and delicious and is perfect for any patriotic event.

Cut the water melon into slices.  I used a seedless watermelon, so if you are using a seeded one, you can pick the seeds out if you’d like.Memorial DayWith the star-shaped cookie cutter, make as many stars as you can. Clean the blueberries.  We found some nice-sized ones at the farmer’s market – they were really yummy too!Memorial Day

Peel the thick lychee skin off and remove the pits.  I was introduced to lychee when I was in Hong Kong and like it a lot.  It’s sweet – some varieties are sweeter than others – and refreshing too.  (I also used lychee for my scary punch at a recent Halloween party).

Put all ingredients onto a tray or into a bowl.

Seriously, it is that easy.  The kids love it because the stars are easy to hold and are super refreshing if it’s a hot day and they are running all over the place!

You could also replace the watermelon with (or add to the recipe) raspberries or strawberries to keep in line with the color scheme.
