I have been blessed with a husband that LOVES to cook (and I LOVE to eat it all!). One of my favorite dishes of his is his homemade Macaroni and Cheese!!!
Directions
A cast-iron skillet is key but if you don’t have one handy you can use an oven-ready dish.
Boil salted water for the pasta cook according to the pasta’s directions – usually 11 mins for al dente. We prefer cavatappi pasta.
Meanwhile, in a saucepan, preferable cast iron skillet, cut and heat 4-5 slices of pancetta. Add 1 and ½ cups of milk or heavy cream. We use 2% milk.
Add 1 pack of Sorrento 4 cheddar cheese to the milk in the saucepan. Mix well with milk. Once all of the cheese has melted, add ¾ cups of grated parmesan.
Once pasta is cooked to your liking, drain and add to the cheese mix. Mix well and add either more cheddar, or a combo of Colby and Monterey jack on top, and bake in oven 30 mins at 375 degrees.
Add panko bread crumbs with butter on top for a crispy top!
This dish is even better the next day! Enjoy 🙂
