Tonight marks the first of eight nights of Hanukkah! As a child, I was brought up celebrating both Hanukkah and Christmas – enjoying the family time, food, and of course – gifts 🙂
Each night, for the next 8 nights, I am going to post something fun related to Hanukkah! Today, I am going to share with you a recipe for a favorite food of mine – latkes! Potatoes – fried – apple sauce – sour cream = DELISH!
Latkes
INGREDIENTS
- 1 pound potatoes
- 1/2 cup finely chopped onion
- 1 egg, beaten lightly
- 1/2 teaspoon salt
- 3/4 cup olive oil
DIRECTIONS
Preheat the oven to 250°F.
Peel potatoes and then grate by hand. Transfer it to a large bowl of cold water as you grate. Let the potatoes soak for about 1 to 2 minutes after the last batch is added to water, then drain well in a strainer.
On a paper towel, place the potatoes and onions. Wring out the ingredients, getting rid of as much water as you can. Put the potato mixture in a bowl and stir in the egg and salt.
Heat 1/4 cup oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking. Spoon 2 tablespoons of your potato mixture per latke into the heated skillet, trying to make each pancake 3 inches in diameter (it doesn’t have to be perfect, I promise it will taste just as good!). Reduce the heat to medium and cook until the bottoms are browned about 5 minutes. Turn latkes over and repeat, about 5 minutes more. Transfer the pancakes to paper towels so they can drain; season with salt. You can add more oil to the skillet during cooking, as needed.
I serve them with apple sauce and sour cream, but they are so good, you can eat them on their own!
