My husband and I decided to dog-ear this Sunday as our “soup making” day. We are both huge soup nuts and figured what better way to spend our Sundays together than cooking together.
Our first endeavor was Italian Wedding Soup.
INGREDIENTS FOR THE BALLS:
- 1 lb. sausage (chicken, turkey or pork)
- 1/2 cup gluten-free bread crumbs
- 1/2 cup romano cheese, grated
- 1 egg
- 2 tablespoons milk
- 1 tablespoon parsley
- 1 tablespoon water
- 1 tablespoon parsley
- 2 cloves garlic, chopped
- 1 teaspoon each of salt and pepper
INGREDIENTS FOR THE SOUP BASE:
- 2 tablespoons olive oil
- 5 carrots, peeled and cut into 1/8″ pieces
- 3 stalks celery, cut into 1/8″ pieces
- 1 medium yellow onion, chopped
- 3 cloves garlic, chopped
- 1/2 cup dry white wine (sauvignon blanc)
- 8 cups chicken broth
- 1 tablespoon dill
- 6 oz gluten free elbow pasta – we love Delallo, which is a corn and rice pasta (delish!)
- 1/4 cup chopped spinach
- Salt and pepper to taste
Pre-heat the oven to 350 degrees.
In a mixing bowl, combine all ingredients for the balls.
Mix and make bite-size meatballs on a baking sheet (you may want to spray Pam or some type of cooking spray so they don’t stick). Bake ball in the oven for 25 – 30 minutes.
While the meatballs are cooking, over medium to low heat, heat the olive oil in a dutch oven or large pot. Add onion, celery and carrots, stirring occasionally until vegetables are slightly soft. Add garlic and continue stirring a bit.
Add white wine and cook for 2 minutes. Add the chicken broth, salt and pepper and bring to a boil. Once boiling, add the pasta and cook according to the pasta cook time.
That would be my husband stirring diligently!
The meatballs should be ready about now. Once the pasta is cooked, add the meatballs and pasta to the dutch oven/large pot, stirring occasionally. Add the spinach and cook for 3 minutes.
Serve with grated parmesan on top.
We were going to save this soup for during the week but had to “test it out”.
Of course, you can make this gluten-full by adding any pasta you would like! What is your favorite soup?

Oh…that looks SOOO good! I’ve never had Italian Wedding Soup (as we were vegan until a few years ago) so I’ll have to try it out. I like recipes that are easy to be made with goodies from my own garden. Thanks for sharing it!
