After we checked out that huge ancient tree and after my friend thought it would be super fun to climb a banyan tree (I get worried about tree climbing, especially after half of a bottle of wine), we went back to the room to get ready for dinner. Showered, dressed and ready to explore some more, we popped open bottle #2 of wine, grabbed our wine glasses and were off! We hung out a bit in one of the courtyards and then decided to check out the restaurant at the top of the tower, Cielo. Super modern with white furnishings and clean lines, this place is definitely cool!
We ordered drinks and got the best seat in the house – overlooking the Intracoastal. I ordered a glass of Malbec while Susan ordered Patron silver over ice (look at the glass with lime in it, in the picture below…it is FILLED with tequila). Knowing that I am a light weight I decided it would be a good thing to order some food!
Considering we just ate a nice hummus platter and bruchetta before the beach, I decided to keep it light. The menu was filled with delicious items, and we decided upon the Halloumi Cheese platter, chickpea fries and brussel sprouts (pancetta on the side a S is a veggie!).
A meal fit for queens!
The halloumi cheese platter was FABULOUS! I had never heard of the cheese before and was so glad it was introduced to me!! It reminded me, somewhat of feta/mozzarella and now I know why. Halloumi cheese originated in Cyprus and was initially made during the Medieval Byzantine period, subsequently gaining popularity throughout the rest of the Middle East region. It is white, with a distinctive layered texture, similar to mozzarella and has a salty flavor. Our halloumi was grilled and served over ciabatta with a tomato caper vinaigrette.
The second dish, chickpea fries, was chosen because the word “fries” was part of the name (heehee) BUT if these fries were made with chickpeas they have to be healthy right??? They were accompanied by a spicy dipping sauce. You didn’t even need the dip – those fries ROCKED!
The third dish, brussel sprouts, is my all time favorite green vegetable. Every time I see that on the menu, I have to order it. All in all, we had a great, carb-free dinner overlooking a beautiful view. 🙂
After eating, we traveled down the elevator to the bar across from the Palm Court for the remainder of our bottle of wine and were in bed by 10:30pm.
