For the past month and a half I have been on a food sensitivity diet, policing whatever I ate. It was hard. Notice WAS in that last sentence. Now, I am not a quitter so please don’t judge. I am a born and bred worrier and sitting there trying to figure out what I CAN eat rather than what I cannot eat was a bit of a nightmare. I do have to say that I lost a bit of weight, and think there might have been an uptick in energy but nothing substantial to prove it (I am very energetic to begin with).
After meeting with another doctor and reviewing my “issues” per say, he came to the conclusion that a lot of my woes could just be a direct response of gluten and not necessarily the strawberries, mushrooms, and over 30 other items on my wallet-sized card of what-not-to-eat. Considering I have been struggling, although going along with the FSD (food sensitivity diet), I welcomed this news. Knowing that this doctor comes from a different “camp” of thought, I slept on his recommendation. The next morning I declared myself gluten sensitive – bye bye FSD (for now).
I am slowly bringing the 30 some odd “declared” foods back into my diet, noting any changes in energy, mood, stomach issues. I am leaving out gluten. So far, egg (whites) have not bothered me (thank goodness – I was running out of breakfast ideas and you cannot even imagine the number of foods that are made with egg). I have found the most delish gluten-free pretzels and continue to research what I can eat, rather than hide from the gazillion things I couldn’t.
I have learned that instead of reading the ingredients of the processed foods, I need to try and make my meals from scratch, using veggies, fruits, meat, etc. For June I have requested that my Conscious Box be gluten-free, and am excited to try some of the great gluten-free food options.
I would love to hear other readers’ stories about their food sensitivities, gluten-free recipes, and more! Please feel free to comment to this post or email me directly at dana@pellerini.com. Happy eating!!

Hi Dana, I read your blog, I am impressed, nicely done. I struggle every day with food. I am grain free since march of -2012′ and just tried to bring in gluten free bagels into my diet. I love the sourdough bagels by Samis Bakery, from Tampa Fl. However, I experienced some intestinal distress, so I decides to eat them sparingly. I also follow the FODMAPS diet, it’s for people with IBS. I am eliminating foods that cause gas and are hard to digest food. I also do not eat any dairy. I frequently visit Dr Mercola’s web site on gluten, and Dr Osborn’s web site.
I have tried Pamela’s baking mix, the pancakes are outstanding, as well as her brownie mix.
I do not eat any onions, garlic, coconut milk, dairy, and only rice and millet flour products. I do not eat any pasta including gf. I have to have a bagel or roll for deli sandwiches, or a turkey burger. I signed up for emails, please share all of your experiences. I will send you interesting information. Your mom and dad shared wonderful pictures of your boys, they are beautiful, you are a blessed young lady. Mom and dad as so proud of all of the grand children.
Keep in touch.

Dana, be careful with corn, it’s known as an allergen. We ate also trying to eliminate all GMO products.
