Let’s Celebrate National Chocolate Chip Day!

Yes, it is a holiday apparently…National Chocolate Chip Day.  This is one holiday I have no qualms about celebrating!  I was dubbed the “cookie monster” when I was little because I LOVED chocolate chip cookies.  Chips Ahoy Chewy Chocolate Chip Cookies to be exact.  I could eat a whole row without blinking.

One day, my parents realized that I wasn’t drinking enough milk so they proposed to me that if I wanted to have my “after dinner” (a.k.a. dessert) chocolate chip cookies, I would have to have a glass of milk with them.  To this day, I cannot have chocolate chip cookies without that glass of cold, delicious milk.

Considering the fact that I now adhere to a gluten-free diet, those days of Chips Ahoy cookies are way gone (insert sad face here).  Both of my boys LOVE them, and we gladly stock the pantry with them – almost because I want to live vicariously through them and it brings back such nice childhood memories (sitting in my den, on one of the recliners – and after the room re-do the grey, black and white huge wraparound couch).

I have been able to find some GREAT replacements.  They are crunchier and a bit thinner than their precedents, but they are good!  Below are some of my choices.

Now Tate’s are awesome, but these are the ones that are super thin and crunchy.  Mind you, I have nothing against them…they are great but not the same “thickness”.  I’ve gotten used to the differences in gluten-free vs. conventional pastries and this is one of them.

Now, I did try to bake gluten-free cookies myself (obvi not from scratch LOL).  Betty Crocker’s mix is the closest to tasting homemade – and technically I did make them in my home.  I know, I know…
