I have received a few requests for the recipes that go along with my previous Meatless Dinner Post (you can read it HERE).
Grilled Portobello Salad
Wipe grill with oil to prevent from sticking…
Smear olive oil on portobellos and sprinkle with salt and pepper
Grill portobellos on the grill maybe about 5-6 minutes per side
In the meantime, cut 2 tomatoes and fresh mozzarella in bite-size pieces, cut FRESH basil, and add minced garlic, salt, and pepper to taste and maybe 2 tablespoons of olive oil and mix.
Top the mushrooms with the mix and enjoy!
Citrus Vinaigrette
In a bowl mix- Juice from half orange, and 1 lemon, 1 shallot, and a little bit of honey. Add salt and pepper and mix. While mixing add ¼ cup of olive oil. Pour over salad and enjoy!
