With my workday ending at 6:00 pm, by the time I get home, it is about 6:30 pm. I get in the door and am greeted by my little one and Sadie (the older one usually barricades himself between the couch cushions while watching cartoons). I drop down my bags and it’s dinner time! Here are some great, fast recipes for workdays that my husband and I love:
CHICKEN IN WHITE GRAVY
Technically there is no white gravy, but this is what my mom and dad call this recipe so it is what it is!
Ingredients
Chicken Broth – 2 cans, maybe more
Drumsticks, thighs, breasts (whichever portions of the chicken you like best)
Sliced mushrooms – one large blue container should do
Onion – 1.5 large onions, diced
Perciatelli (depending on how many people you are feeding…for 4 people I would make 1 lb.)
Olive Oil – 2 tablespoons
Directions
I use an electric skillet to make this (I love my fry daddy). It looks like this:
I digress. OK…heat the olive oil in the electric skillet, then add the onions and mushrooms. Stir occasionally until the onions are transparent. Add the chicken and cook until the pieces are browned on one side. Flip the chicken and add the chicken broth (enough to almost cover the chicken). Lower the heat a tad, cover, and let cook for about 30 minutes. While the chicken is becoming delicious, boil water and cook the perchiatelli. Strain once cooked and put aside. Once the chicken is fully cooked, turn the heat off. You can either plate the dishes in the kitchen OR if you have a big pasta bowl, fill the bowl with the pasta and then add the chicken and “gravy” on top. Garnish with grated cheese.
