During our stay cation last week, we basically ate our way through the weekend sans kiddies. That Saturday night, we headed east to a beautiful, local resort. It was gorgeous out, so we toured the grounds before heading to dinner.
We stumbled upon this great dinner date spot within the resort while trying to find the restaurant we made reservations at (apparently it was off property…not noted on the website though). We decided to dine there and were so glad we did! One great dish that we came across was their warm brussel sprout caesar salad. It was DELISH and we vowed to knock it off when we got home.
You only need a few ingredients and it was actually quite easy to make.
INGREDIENTS
- Brussel sprouts, 1 lb.
- Pamesan cheese
- Caesar dressing (pre-made or homemade, your choice)
- Cracked pepper, to taste
HOW DID WE MAKE IT?
Heat a medium sauce pan with water. Wash the brussel sprouts. Cut the end off, then cut in half the long way. Peel off the leaves and put in a bowl. Once the water comes to a boil, add the brussel sprout leaves and let cook for 4 – 5 minutes. Strain, then place into salad bowls. Toss leaves with caesar salad dressing. Grate parmesan over warm brussel sprout leaves and add cracked pepper to taste. Serve immediately.
