Just thinking about how my home smells when we start the Sunday gravy makes my mouth water. The mixture of the garlic, onion, basil, parsley, the different meats…heavenly!
I lucked out with parents that enjoy cooking and are really darn good at it. A little while back I posted about my homemade chicken soup – the cure-all for any cold!
For my husband’s birthday, we decided to go with the traditional Sunday Gravy. You can NEVER go wrong with that. My aunt and uncle were in town for my dad’s 70th birthday so it was family cooking fun. Let’s begin!
SUNDAY GRAVY INGREDIENTS
- 2 tablespoons extra virgin olive oil
- 6 Italian sausage links – mild or hot (we prefer sausage without fennel)
- Country-style ribs
- Meatballs (recipe to follow)
- Pork or beef braciola
- 1/4 lb pancetta – 1/8″ inch slices
- 1 large Spanish onion
- 5 cloves of garlic
- 1 tablespoon oregano
- 1 tablespoon basil
- 1 teaspoon salt
- 1/4 cup red wine – we recommend Chianti
- 3 28oz cans of San Marzano tomatoes
- Parmesan cheese for serving
HOW TO MAKE SUNDAY GRAVY RECIPE
First, you brown chopped garlic and onion in the bottom of a LARGE pot (the bigger the pot, the more meat that can fit, the more intense the flavor, and more leftovers!) in extra virgin olive oil.
Next, you start to add the sausage, pork bones, braciola, a bit at a time – to brown – taking them out when done to add the next batch.
Once all of the meats have browned, pour in a bit of red wine to help get the onion and garlic off of the bottom of the pot, and to add to the flavor.
Next, we take a huge can of crushed tomatoes and crank them through a tomato press.
Pour the tomato sauce into the large pot, adding whatever spices you like best. I personally love ample amounts of basil, oregano, garlic powder, and grated Parmigiano cheese.
Add the meat and let the sauce simmer for a few hours. I usually let it cook for 3 hours.
Boil some water for whatever pasta is your favorite (our personal faves are cavatelli and fusilli).
Sunday gravy dinner is not complete without some crusty bread, whether it is super fresh and soft Italian bread or garlic bread, to dunk…that is mandatory!
There you have it…a delicious Sunday tradition!
