Another favorite weeknight recipe is the chopped salad. It allows for so much versatility and you can tailor it to your own personal tastes.
We usually make ours with the following ingredients:
- Romaine lettuce, cleaned and chopped
- Red onion, chopped (by my husband because my eyes go bezerk from them)
- Cucumber, either English and cubed or conventional (peeled and cubed)
- Green onion, sliced (I can handle those…lol)
- Pine nuts or really any nuts you like (walnuts, sunflower seeds, etc.)
- Crumbled cheese – I love either feta or gorgonzola
- Protein – either grilled chicken or shrimp are my favorites
- Dressing of choice – I like Bolthouse Farms’ Ranch because it is yogurt-based.
- Chickpeas
- Olives
You can serve this on its own or pair it with a soup or half sandwich.
