My friend Jamie is an amazing cook and baker. For Christmas, she would make platters of pure deliciousness for her friends. I looked forward to delivery every year! Now she lives in VA, so I don’t get the deliveries anymore BUT I do get pick her brain and learn about new food initiatives. She has also broadened her amazing-ness to homemade facial cleansers and household cleansers. (I’ll save that for another post.)
As you know, I am trying to eat healthier. During the workweek, my biggest food issue is mid-afternoon snacking. Jamie had mentioned, in one of our many IM conversations, that she had just made homemade granola…I asked for the recipe ASAP!
I finally got to try it last weekend and it is awesome…I have tried so many pre-made granola mixes and they just didn’t cut it!

JAMIE’S SUPER DELICIOUS HOMEMADE GRANOLA
Ingredients
3 c rolled oats
1 c sliced almonds
1/2 cup pecan or walnut pieces
3/4 cup shredded sweetened coconut
1/4 cup ground flaxseeds (optional)
1/4 c + 2 tbsp brown sugar
1/4 c + 2 tbsp honey or real maple syrup (I used honey because I didn’t have maple)
1/4 cup canola oil (you could probably use coconut oil too)
3/4 tsp sea salt
1 tbsp vanilla
1 tsp cinnamon
1 cup dried cranberries
Directions
Preheat oven to 250. Mix all dry except cranberries. In a separate bowl whisk honey, canola oil & vanilla, then combine with dry ingredients. spread on a sprayed baking pan and bake, mixing around every 15 minutes, for 1 hr 15 min. The mixing is just to achieve even color. After you remove from the oven toss in the cranberries. I think you can add them in at the beginning but I didn’t want them to get all mushy.
How to store homemade granola?
You can store it in an airtight container for about 2 weeks.
